Tasting Notes
The nose is deep with opulent brooding dark red fruit, laced with subtle cassis and supported by attractive whiffs of leather and cigar spice. On the palate, pinpoint purity of red cherry fruit, vividly sketched against velvet coated, rolling tannins. Bright bursts of spiced plum fruit complement an elegantly smooth, soft, yet engaging core, layered with firm oak that tails towards a classically dry, chiseled finish.
Food Pairing
A butterflied leg of lamb or a lamb steak, seasoned with rosemary and served with a side of gratin dauphinoise. Slow-braised beef or venison would also pair well given the lengthy tannin structure.
